This Syrah smells of sage, desert rain, rosemary, smoke, and caramel.  On the palate, flavors of black olive, cinnamon, blackberry, and char come together for a well-integrated, mouth-coating sip.  The finish is persistent, with all the flavors holding together to the end.

Tasting Notes
Very deep ruby red in color. Has a super gamey taste to it with cherry and sage. Nice, smokey finish.
Production Notes
We sourced our fruit for our 2016 Syrah from the Chirichaua Vineyards and Juan Alba’s vineyards on August 26th, 2016. Both vineyards are located in Cochise County, Arizona. We blended in 17% Viognier. We inoculated on August 26th, 2016. We fermented the batches together for a total of 10 days. It was pressed on September 7th, 2016 and transferred to 100% new oak on September 12th, 2016. This wine will age for a minimum of 14 months, but most likely we will bottle sometime in 2018, so aging will end about 17-18 months in oak.
