Aridus Wine Co

Our Oak-aged Montepulciano wine has, by far, the most enthusiastic following due to its richness. The wine exhibits deep black-fruit flavors such as boysenberry, blackberry and prune, licorice, and oaky flavors of cocoa, vanilla and mocha. The grippy tannins will age this wine to perfection.

We dedicate this wine to the memory of John Kovacs, proprietor of Sándor Vineyards and friend.  His enthusiasm and joy for winegrowing in the Chiricahua Foothills was infectious, and he is dearly missed.

We sourced the fruit for our 2016 Petite Sirah from Sándor Vineyards in Cochise County, Arizona.  The fruit arrived on September 10th, 2016. The fruit was crushed on September 11th and inoculated on September 12th with L2323 yeast.  The fruit received punchdowns three times per day until dry.  Fermentation lasted a total of 7 days, with temperatures peaking in the low 90s before being pressed on September 22nd.  The wine was then settled for a week, and barreled down into 100% new French oak on September 27th, 2016.  It was aged 28 months before racking to tank and bottling.

This wine is a clear, deep purple with aromas of mulberries, blackberries and a hint of violet.  On the palate it is well-balanced, with medium tannin, body, alcohol, and intensity.  This wine is intensely savory, with tamari, bay leaf, wet earth, leather, and tellicherry pepper dominating the palate.  These are bolstered by fresh flavors of blackberry, and clove spice.

Our first harvest from our Estate Vineyards, situated in the foothill mountains in Pearce, Arizona, brings this delightful white field blend of Viognier, Sauvignon Blanc, and Malvasia Bianca.  This wine has a bright lemon-lime acidity, with a touch of marshmallow-like oak sweetness, and an intriguing hint of capers.  With tart, crisp tropical notes, this wine is perfectly refreshing for our hot Southwest summers.

This Tempranillo is built to hold up to a bit of age with its high level of acidity.  It has aromatics of cut grass, sweet oak and vanilla. It’s flavors are of juicy red currants, fresh raspberries, and a bit of orange zest.  This wine is showing well now, but we expect the fresh fruit aromas and refreshing acidity to carry this wine for another 5-7 years.

We sourced the fruit for our 2016 Viognier from New Mexico Vineyards located in the Mimbres Valley, New Mexico. The fruit arrived at the winery on August 18th, 2016. The fruit was de-stemmed and pressed immediately. After chilling, settling, and racking, we inoculated with D47 on August 23rd. It was one of our longest fermentations lasting a total of 20 days. After chilling and settling, we racked to barrel and allowed malolactic fermentation to proceed halfway before stopping the conversion. This was barreled into 19% stainless steel and the remaining 81% in new French oak. The wine remained in barrel for 15 months before being transferred to tank and bottled.

This Viognier has a rich, creamy mouth-feel with intriguing aromas and flavors of bay leaf, ginger, grilled grapefruit, stone fruit, and white cherry. Soft and lightly oaky, this Viognier stands as a stunning example of what can be achieved with this variety in the high altitudes of the American southwest.

Our 2016 Cabernet Franc is from from New Mexico Vineyards, Mimbres Valley, New Mexico. We brought in just under 8 tons of fruit on September 29th and 30th, 2016. Approximately 2% was from High Lonesome Vineyards received on August 27th, 2016. The fruit was split into two lots, one of which received punchdowns and the other pumpovers. The pumpover tank was inoculated with a blend of D-47 and D-80 yeasts after a three day cold soak. The punchdown tank also cold soaked for three days and was inoculated with BM45 yeast. Fermentation progressed over the course of seven days with a maximum temperature of 86F on the pumpover tank and 88F on the punchdown tank. The tanks were then pressed, and after settling, racked to new French and American oak barrels for aging. The wine remained in barrel for two years and 3 months before being transferred to tank and bottled.

This wine is a clear, deep ruby color with enticing aromas of wild plum jam, fresh-cut wood, and Vietnamese cinnamon. It is well-balanced, with a refreshing acidity and moderate tannins, and the aromas are joined on the palate with notes of cranberry and candied orange peel. The finish is long, with a core of sweet spice and plum.

This Silver Medal Winner of both 2017 Finger Lakes International Wine Competition and 2017 San Francisco Chronicle Wine Competition, has a clear, pale lemon colored wine with a nose dominated by clean, delicate aromas of fresh tropical fruit—pineapple, banana, and guava.  The body is light, crisp, and refreshing with flavors of citrus and tropical fruit.  Orange, lemon, pineapple, and passion fruit fill the palate and a hint of fresh ginger spiciness rounds out the finish. This Sauvignon Blanc goes well with feta, goat cheese, pine nuts, poultry, pork, fatty white fish dishes, scallops, lobster, shrimp and most sushi. Citrus, green apple and asparagus all bring out the fruitiness of the Sauvignon Blanc as well as light cream sauces, chives and can be a nice wine for a sorbet, key lime pie and even a slice of mango.
